Recipe of the Month:

Sweet Potato Casserole

3 Cups mashed sweet potatoes
[fresh cooked, use 3-4 sweet potatoes]
[canned, use 3 small cans]
1/2 Cup sugar
1/2 tsp. salt
2 eggs (beaten)
1/2 stick butter or margarine (melted)
1/2 Cup milk

Combine above ingredients, mix well, pour into 9 x 13 pan.

Topping (make first and set aside)
1/2 Cup brown sugar
1/3 Cup melted butter
1/3 Cup flour
1 Cup chopped nuts (pecans)

Combine above ingredients and crumble on top of sweet potatoes.
Bake 50-55 minutes at 300 degrees.

Topping will form a glaze when baked.
